Diamond lists this as a bronze die for the Sedani cut (4.5mm), built for use on its extrusion machines. It's the celery-shaped ridged tube cut, a short pasta built to trap sauce along its curved ridges. Unlike Teflon dies, which push out a smooth, slick strand, bronze drags on the dough just enough to leave a matte, textured surface for sauce to grip. As with the rest of Diamond's die range, this cut comes in more than one size — confirm which one matches your extruder before placing an order.
