The NTS4S-L doubles the NTS2S-L's capacity to 4 trays while keeping the same dedicated steam-only cooking function. That extra capacity suits a kitchen doing enough steamed food — vegetables, fish, rice, and similar dishes — that 2 trays would mean running the steamer more than once per service.
