The largest cabinet in the range, the 28-inch Crisp N Hold, is built for kitchens holding serious volumes of fried food rather than a single counter unit. At 527 x 714 x 737mm and 44kg it's noticeably bigger and heavier than the 14 and 18-inch cabinets, and it steps up from a simple plug to a single phase supply to handle the extra load. A stated 0-88 temperature range gives finer control over holding conditions than you'd get from a fixed heat lamp setup, still relying on air circulation rather than radiant heat to stop fries, nuggets and fried shrimp turning soggy. Stainless steel construction throughout and a 1 year parts-only warranty back it up. Ideal where a single hot-holding station needs to cover a whole fryer line.
