This 20cm lid is built to a 260g weight class, a step up from the smaller 14-18cm sizes in the Matfer Bourgeat range, giving a bit more heft to hold in steam on bigger saucepans and sauteuses. It fits both the Excellence and Tradition pan ranges, so kitchens running either line can standardise their lid sizing without hunting for a universal fit. Stainless steel means it goes straight in the dishwasher without deteriorating, and like every lid in the range it isn't non-stick coated since it never touches food directly.
