Step up to the 18-inch FMC whisk from Matfer Bourgeat and you get more reach over a bigger bowl or stockpot, at 450mm long and 286g - a bit more whisk than the 16-inch version's 270g, for jobs where you need to cover a wider surface without leaning in. It's built the same way as the rest of the FMC range: memory-thread wires that hold their shape under hard use, and a watertight, heat-resistant handle rated to 220°C so it can go straight from a hot pan into the wash. Dishwasher safe and approved to NF food hygiene standards, it's aimed at professional kitchens making mayonnaise, stiff creams and anything else that punishes a cheaper whisk.
