This is the 16-inch of Matfer Bourgeat's FMC whisk range, built for whipping mayonnaise and other stiff creams where a flimsier whisk would bend out of shape. The wire keeps its form thanks to Matfer's 'memory thread' construction, and the Exoglass composite handle is heat-insulating and watertight, rated up to 220°C, so it copes with hot pans as well as cold bowls. At 270g and 390mm long it's the shorter, lighter of the pair, which makes it the easier one to control one-handed over a smaller pot.
