The largest pan in the Classe Chef line covered here, 36cm across and holding 4 litres, at 2.09kg it's more than six times the weight of the smallest 16cm pan in the same range, reflecting just how much more aluminium and coated surface goes into a pan this size. It carries the same four-times epoxy coating as the rest of the Matfer Bourgeat non-stick range, so despite the size jump the cooking surface is built to the same long-life standard. This is a pan for high-volume sauce or braise work rather than everyday single portions, and like every pan in the range it's hand wash only to keep that coating performing. Expect it to hold its weight and heat well over a sustained service.
