This 18-inch balloon whisk is the long-reach option in Matfer Bourgeat's range, at 450mm and 220g - notably heavier than the 10-inch whisk's 78g, which makes sense given the extra wire length needed to cover a big stockpot or mixing bowl. The stainless steel handle is heat resistant to 220°C and, like the smaller whisk, the wires are sealed in rather than fitted loosely, so it stays properly hygienic through repeated dishwasher cycles rather than trapping moisture at the join. It's the whisk to reach for when you're working in bulk - big batches of cream, batter or egg whites - where the shorter whisk just doesn't have the reach to work the whole bowl.
