The AM/6S is a 6 litre emulsifying knife set, sitting between the 4 and 9 litre options in Diamond's range. Its finer, closer-set blade is built for smooth emulsified product — pâté, mousse, hot-dog-style forcemeat — rather than the coarser chop a regular or serrated blade would leave. At around 1kg, it's a straightforward replacement for a worn or damaged blade on a matching 6 litre bowl cutter. One-year parts-only warranty as standard.
