Like the rest of the Angel Juicer line, it works on a twin-gear crushing and pressing action rather than a fast-spinning blade, running slowly enough to avoid the heat and oxidation that centrifugal juicers generate. That makes it a good fit for juice bars and health-food kitchens that want to hold onto colour, flavour and nutrients in fresh juice, and it's equally capable on leafy greens, wheatgrass and firmer fruit and veg.
