The PB120EB-3 is the largest configuration in this line, stacking three 4-tray decks for 12 trays' worth of independently controlled baking capacity in a single oven. It's aimed at bakeries with real volume to get through — multiple product lines, a long service day, or supply to more than one outlet — where a single or twin-deck oven would mean bakes queuing for oven space. As with the rest of the PB120EB range, each deck can be run at its own temperature and time, so bread, pastry, and finishing bakes don't have to compete for the same chamber.
