At 2/1gn tray width, each shelf takes the wider gastronorm format rather than the narrower 1/1gn size, meaning a genuinely large batch capacity per load, suited to high-volume production kitchens, central kitchens supplying multiple sites, or large-scale catering operations rather than a la carte kitchens doing smaller covers. Built-in wash system automation removes the labour and downtime of manually scrubbing an 11-tray combi oven chamber after a day's cooking, running a programmed clean cycle instead. Combi ovens of this scale represent a serious capital investment, but for kitchens producing at real volume they replace multiple smaller ovens with one high-throughput unit.
