Product code 81P marks this out as a Sedani die (6mm), cast in bronze for commercial pasta production. It's the celery-shaped ridged tube cut, a short pasta built to trap sauce along its curved ridges. The usual trade-off with bronze is a slower extrusion speed than Teflon, but the coarser surface it leaves on the pasta is the one most chefs and diners actually prefer.
